Today was all about food. Well, maybe not ALL food but that is what I’m highlighting here.
Our weekly produce box was delivered today. I was hoping it would be delivered early enough in the day I could make use out of the large amount of strawberries I ordered. And it was delivered early enough – hooray!!
The strawberries are just beautiful right now! I made a strawberry cobbler and vanilla ice cream to have for dessert after dinner – our Cinco de Mayo themed dinner of course!

For dinner I made our very favorite enchiladas from The Defined Dish cookbook. I have made many recipes from this cookbook and none will disappoint! All are delicious and have turned out great. Nothing too complicated at all but amazing in flavor.

I think the girls – and even myself – are hitting a little bit of a slump. It is a little more difficult to get up with our alarm every morning. We all move a little slower getting dressed and busy with school and work each morning. And it is harder to keep a steady focus during the day as well. Being we still have about five more weeks of school, I have to figure out how to break us out of this slump.
When I started hearing the term “quarantine fatigue” I initially associated it with the desire to get out of the house and go places but I think it definitely fits this situation as well. We are certainly starting to feel the fatigue of each day being a lot like the day before – same type of school assignments in front of a computer, no new faces, no new voices other than those belonging to our family of four.
